Scrumptious Sausage Rolls

Pennyroyal Farm Otway Preserves  ~ Famous Sausage Roll Recipe with our Autumn Fruit Chutney

Ingredients required:

  • 500g sausage mince
  • 1 egg
  • extra egg beaten (for brushing pastry)
  • 1 brown onion
  • ¼ cup breadcrumbs
  • 1 carrot
  • 4 sheets puff pastry


Set oven to 200 Degrees. Grease and line two baking trays.

In a large bowl combine the sausage mince with an egg, a finely chopped onion, ‘Pennyroyal Farm Otway Preserves Autumn Fruit Chutney’, grated (coarsely) carrot and breadcrumbs.

Cut each sheet of pastry in half. Shape mixture into a long sausage. Guide the sausage mix along one edge of each pastry sheet and roll tightly to seal.

Cut each roll into 3 or 4 pieces and brush with a beaten egg. Place on greased oven trays about 3cm apart. Score tops of pastry.

Bake for 20-25 minutes until golden brown and cooked through.

Serve with ‘Pennyroyal Farm Otway Preserves Tomato or Tomato & Chilli Sauce’ for extra flavour. (Try them without the sauce first as they have their own unique flavour which will keep all the family coming back for more.)

Moroccan Veggie Burgers

Pennyroyal Farm Otway Preserves ~ Moroccan Veggie Burgers with our Mango Chutney

Ingredients required:

  • 2 Cans 400g chick peas
  • 1 Can 400g brown lentils
  • 300g cooked sweet potato
  • 4 tablespoons Moroccan seasoning
  • 1 egg
  • 2 spring onions
  • 2 tablespoons plain flour
  • 3 tablespoons ‘Pennyroyal Farm / Otway Preserves Mango Chutney’
  • 1 tablespoon Greek yoghurt


Drain chick peas and lentils. Mash chick peas and combine with lentils, Moroccan powder, egg, diced spring onions, flour, and cooked sweet potato mash.

Roll into burger size, place in non stick frying pan. Cook 2-3 minutes on each side until golden brown. Garnish with ‘Pennyroyal Farm / Otway Preserves Mango Chutney’ and greek yoghurt.

Beef Lentil Burgers

Ingredients required:

  • 1 can brown lentils
  • 1 onion – quartered
  • 1 large (or 2 small) carrots – roughly chopped
  • 250g beef mince
  • 4 tablespoons ‘Pennyroyal Farm / Otway Preserves KASUNDI’
  • 2 eggs
  • 2-4 tablespoons plain flour or ¼ cup breadcrumbs (gluten free or regular) to bind


Drain lentils. Add all ingredients (except flour) to a food processor & blend. Mix through flour. Put mixture into fridge for half an hour.

Roll into burger size, place in non stick frying pan. Cook on each side until golden brown.

Great on their own served with salad or as a burger on a toasted bun, with your favourite toppings. Can also use as a taco or wrap filling.
